Proximate and amino acid profile of humpback grouper (Cromileptes altivelis) from Tomini Bay Gorontalo Indonesia

Abstract Humpback grouper ( Cromileptes altivelis ) commonly known as rat is one type of marine fish that has high nutritional value but rarely used a fishery product. In this study, we investigated the proximate content and types amino acids found in flesh humpback ). The method study was results showed contained 27.59% protein, 0.87% ash, 59.67% water, 7.25% fat, 4.63% carbohydrates. Meat contains 86.157,72 mg/kg (50.59%) essential acids, 84.158,72 (49.41%) non-essential acids.
